Cinnamon and Cardamom Buns with Brown Butter and Maple Icing

When we first moved to the Inner West it was during lockdown 1.0, at the time we could only go out for "essential services" like food and exercise. So I'd walk along the same narrow streets, gaze at the same cute terrace homes to our local cafe. They used to sell these super soft cinnamon scrolls that had a generous lathering of cream cheese icing on top. I will admit I consumed a fair few during lockdown. I think I convinced myself that eating baked goods was ‘essential’. I feel like everyone went through some form of baking mania during lockdown, from experimenting with homemade sourdough to perfecting banana bread.


These cinnamon scrolls are lathered in a brown butter and maple icing which I absolutely love and can prove it, but that's a story for another day. I also added in a smidgen of cardamom because the smell of it baking in the kitchen is glorious.
